At the end of last year Arkady Novikov opened the “Syrovarnya” (“Cheese Dairy”) restaurant in the Northern Capital with its own cheese-making facility.

You can actually watch the cheesemakers at work: the main dairy is opposite the chef’s table where tastings and master-classes are held. Cheeses made using Italian technology — mozzarella, burrata, stracciatella, halloumi, caciotta and ricotta — are used in every section of the menu devised by concept chef Sergey Nosov.
