Claudio di Bernardo, the chef from the 5-star Grand Hotel Rimini who is now in charge of the kitchen at the Amo Cucinare restaurant in St. Petersburg, has celebrated the beginning of spring with a whole series of outstanding new dishes.

The hits of the season promise to be pumpkin flan with prawns and hazelnuts in pecorino sauce, tagliatelle with prawns and octopus in tomato sauce with pancetta and vermouth, and carrot risotto with scallop, colonnata bacon and black truffles. An interesting exercise will be to experiment with gastronomic pairs, since the wine list is very varied and not limited to wines from regions of Italy.
