The team at the Four Seasons Hotel Lion Palace St. Petersburg has been joined by the 30 year-old pastry chef Nicolas Lambert, who previously worked at the 2-star Caprice restaurant in Hong Kong.

His “Trilogie de Chocolat” is still a speciality at that restaurant. Besides chocolate, Nicolas frequently uses cherries, mangos, strawberries, almonds, limes… “I like working with ingredients that are in season”, he says. “And I use only three or four textures and no more than three flavours. My desserts may look complicated, but in fact they are very simple”.

Incidentally, the French maestro is the current holder of the “Asia's Best Pastry Chef” title according to the rating of “The World’s 50 Best Restaurants” (and the youngest winner in the trophy’s history). Nicolas Lambert’s first task is to update the “Tea Lounge” menu, but later his desserts will feature in the hotel’s other restaurants Percorso and Sintoho. It goes without saying that from now on the cakes for wedding receptions will also be the work of this celebrated confectionery chef.
